Jalapeno Popper Grilled Cheese

I'm always looking for new recipes to make on Football Sunday. I want something delicious, quick to make, easy to eat, and without buying too many random items that I wouldn't use in other recipes throughout the week. I came across this perfect one last week and tried it out. It was definitely a hit and I highly recommend it.




jalapeno popper grilled cheese sandwich

makes two sandwiches

butter
4 slices bread (I used a french bread found in the grocery's bakery)
2-3 tablespoons cream cheese
2 jalapenos, grilled/roasted (put under broiler until blackened a little)
3-4 ounces sharp cheddar cheese,
grated*


*Grating / shredding cheese helps it melt evenly

Spread cream cheese on two of the four slices of bread. Slice the grilled jalapenos into strips, arrange the grilled jalapeno strips over top of cream cheese. Top with grated cheddar and other slice of bread.
Melt butter in skillet, cook sandwiches over medium heat for a minute or so, turning to cook both sides until golden brown and cheese is melted through (lowering heat and placing a lid over pan melts cheese quickly).
